Salad
- 200 g iceberg lettuce
- 50 g broccoli florets
- 1 x medium avocado
- 8 x medium apricots
- 50 g walnuts

Mint Cream Dressing
- 120 ml coconut cream
- 20 g mint leaves
- 2 tsp lemon juice
- pinch salt
Instructions
Preparation
- Shred the lettuce.
- Cut the broccoli florets relatively small.
- Dice the avocado.
- Slice the apricots.
- Break up the walnuts.
- Finely chop the mint leaves.

Salad
- Step 1
- Mix the lettuce, broccoli, avocado, apricots and walnuts.
Dressing
- Step 2
- Mix the coconut cream, mint leaves, lemon juice and salt.
- Step 3
- Mix it all.
