
Paleo-friendly beef mince, keep it paleo with courgette noodles or add some tortillas. The kids are so-so but the adults love it.

Beef Mince

Ingredients
- 500 g beef mince
- 110 g (1 x medium) onion
- 200 g (½ can) chopped tinned tomatoes
- 100 g (½ a head) broccoli
- 150 g (¼ head) cauliflower
- 120 g (1 medium) bell pepper, any colour
- 1 tsp lard
- 120 ml coconut cream
- 1 x chicken stock cube

Preparation
- Finely chop the fennel
- Dice the broccoli and cauliflower.
- Slice the bell pepper.
Method
- Step 1
- Heat the lard in a large frying pan over medium-high heat. (Number 7.)
- Step 2
- Fry the fennel and the bell pepper until soft, about 15 minutes.
- Step 3
- Add the beef mince to the same frying pan and fry for 5-10 mins until the meat is brown.
- Turn the heat down to low.
- Step 4
- Add the tinned tomatoes, the coconut cream and the chicken stock cube.
- Leave to simmer for 40 mins.
- Step 5
- Boil some water in a pan.
- Add the broccoli and cauliflower.
- Boil for about 20 mins.
- Step 6
- As soon as the broccoli and cauliflower are soft, remove them from the water and add them to the mince.
- Step 7
- Serve.
