Chicken Basque

Ingredients
- 2 x chicken breasts
- 1 tbsp flour
- ½ tsp salt
- ¼ tsp black pepper
- 3 x bell peppers (any colours)
- 3 x tomatoes
- 1 x onion
- 1 tbsp lard
- 2 tbsp tomato puree
- 2 x cloves garlic
- 100 ml single cream
- 240 ml chicken stock
- 1 tbsp apple cider vinegar
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp sweet paprika
- 1 tsp dried thyme
Instructions
Preparation
- Dice the chicken breast.
- Dice the onion.
- Slice the bell peppers.
- Roughly chop the tomatoes.
Method
- Step 1
- Heat the lard in a large frying pan.
- Step 2
- Season the chicken breast with ½ tsp salt and ¼ tsp black pepper and cover with flour.
- Cook in the pan until juices run clear, about 5 mins.
- Remove the chicken, cover and set aside.
- Step 3
- In the same pan, cook the peppers and onion will soft, about 5-10 mins.
- Step 4
- When the onions and peppers are soft, add the tomatoes, and cook till soft.
- Step 5
- Add all the remaining ingredients, including the cooked chicken and simmer for 45 minutes.
- Step 6
- Serve.
