This rocked! A mild yet super tasty curry made with turkey, dried herbs, and spices which Carl and I loved. Credit goes to the original author, I just used turkey instead of chicken.

Chinese Turkey Curry

Ingredients

  • 500 g turkey breast
  • 2 tsp plain flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp oil
  • 1 tbsp oil
  • 250 g onion
  • 1 x garlic clove
  • 2 tsp curry powder
  • 1 tsp turmeric
  • ½ tsp ground ginger
  • ½ tsp brown sugar
  • 1 tsp dark soy sauce
  • 400 ml chicken stock
  • 50 g frozen peas

Instructions

Preparation

  • Dice the turkey breast.
  • Dice the onion.
  • Crush the garlic clove.

Method

  • Step 1
    • Heat one of the tbsp of oil in a large frying pan.
    • Fry the onion on medium heat (Number 5.) till soft.
  • Step 2
    • Add the garlic, curry powder, turmeric, ground ginger and sugar.
    • Cook for 1 min, stir continuously.
  • Step 3
    • Add the chicken stock and soy sauce.
    • Cover and leave to simmer for 15 mins.
  • Step 4
    • Meanwhile, sprinkle the diced turkey with the salt and pepper and then coat the pieces with flour.
  • Step 5
    • Heat the second tbsp of oil in another medium-sized pan on high heat. (Number 8.)
  • Step 6
    • Add the turkey and cook till browned and the juices run clear.
  • Step 7
    • By now, the sauce should have thickened.
    • Scrape all the turkey pieces and any of the cooking juices into the large pan containing the sauce.
    • Add the frozen peas.
    • Stir together.
  • Step 8
    • Cover again and leave to simmer for another 5 mins.

    • Serve.
