A variation of the cheesy pasta bake, keep the simplicity but add to the flavour with spicy chorizo and filling baked beans. Carl preferred it, but the kids wanted the plainer version.

Chorizo And Baked Bean Pasta Bake

Ingredients

  • 200 g pasta
  • 50 g mozzarella cheese
  • ½ tbsp butter
  • 50 g onion
  • 1 x clove garlic
  • 1 tbsp plain flour
  • 150 ml milk
  • 400 g baked beans
  • 25 g chorizo
  • For the topping
    • 50g mozzarella cheese

Instructions

Preparation

  • Grate the mozzarella.
  • Dice the onion.
  • Crush the garlic.
  • Dice the chorizo.

Method

  • Step 1
    • Preheat a fan-assisted oven to 175°C.
  • Step 2
    • Set the pasta to boil.
  • Step 3
    • Melt the butter in a small frying pan over medium heat.
    • Fry the onion until soft.
    • Add the garlic and chorizo and fry for 1 minute.
  • Step 4
    • Turn the heat down to medium-low.
    • Add the milk and 50g of mozzarella.
    • Stir until the mozzarella is melted.
  • Step 5
    • Add the flour and stir in.
    • Remove from the heat.
  • Step 6
    • Grease a large casserole dish.
    • Drain the cooked pasta and add it to the dish.
    • Stir in the milk-cheese mixture.
  • Step 7
    • Sprinkle the remaining 50g of mozzarella over the pasta.
    • Bake for 20 minutes.
