
This was a very tasty frittata which we loved but obviously the kids hated it.

Goat's Cheese And Mixed Peppers Frittata

Ingredients
- 200 g mixed bell peppers
- 50 g goat's cheese
- 30 g shallots
- 6 x eggs
- 60 g cream
- 1 x garlic clove
- ¼ tsp salt
- 1 tbsp butter

Preparation
- De-seed and thinly slice the bell peppers.
- Peel and finely slice the shallots.
- Crush the garlic.
Method
- Step 1
- Pre-heat a fan-assisted oven to 200° C.
- Step 2
- Mix the eggs, bell peppers, goat's cheese, shallots, cream and salt in a bowl.
- Step 3
- In a 23cm x 23cm casserole dish, use a pastry brush to brush the butter over the bottom and sides of the dish.
- Pour the egg mixture into the casserole dish.
- Bake for 30 mins.
- Step 4
- Work a spatula around all sides of the dish to loosen the frittata before removing it from the dish.
- Serve.
