This was a very tasty frittata which we loved but obviously the kids hated it.

Goat's Cheese And Mixed Peppers Frittata

Ingredients

  • 200 g mixed bell peppers
  • 50 g goat's cheese
  • 30 g shallots
  • 6 x eggs
  • 60 g cream
  • 1 x garlic clove
  • ¼ tsp salt
  • 1 tbsp butter

Instructions

Preparation

  • De-seed and thinly slice the bell peppers.
  • Peel and finely slice the shallots.
  • Crush the garlic.

Method

  • Step 1
    • Pre-heat a fan-assisted oven to 200° C.
  • Step 2
    • Mix the eggs, bell peppers, goat's cheese, shallots, cream and salt in a bowl.
  • Step 3
    • In a 23cm x 23cm casserole dish, use a pastry brush to brush the butter over the bottom and sides of the dish.
    • Pour the egg mixture into the casserole dish.
    • Bake for 30 mins.
  • Step 4
    • Work a spatula around all sides of the dish to loosen the frittata before removing it from the dish.
    • Serve.
