Guacamole On Boiled Eggs

Ingredients
- 4 x eggs
- 1 x avocado
- 1 x tomato
- 1 x spring onion
- 1 x garlic clove
- ½ tsp olive oil
- ¼ tsp lemon juice
- ¼ tsp lime juice
- pinch sweet paprika
- pinch salt

Preparation
- Peeled and de-stone the avocado.
- Finely chop the tomato and the onion.
- Crush the garlic.
Method
- Step 1
- Place all four eggs in a saucepan of cold water. The water should cover the eggs.
- Place the pan on the hob and turn the hob up high.
- Bring the water to a boil and set a timer for 7 mins.
- Step 2
- Using a fork or a food processor, make the avocado smooth.
- Mix in all of the remaining ingredients except for the sweet paprika.
- Step 3
- When the 7 mins are up, immediately run the eggs under cold water until they feel cool.
- De-shell the eggs.
- Step 4
- Slice the eggs, divide them in half and arrange the slices on two plates.
- Sprinkle each portion with a pinch of salt.
- Step 5
- Spoon the guacamole over the boiled egg slices.
- Sprinkle the sweet paprika over each portion.
- Step 6
- Serve chilled.
