Machine-made delicious vanilla ice cream with honey as the sweetener. Not the cheapest recipe but everyone loved it including a visiting Great Auntie.

Honey Vanilla Ice Cream

Ingredients

  • 250 ml cream
  • 250 ml milk
  • 85 g honey
  • 2 egg yolks
  • 1 tsp vanilla essence
  • ¼ tsp salt

Instructions

Method

  • Step 1
    • Add the cream and milk to a pan and heat until hot but not boiling.
    • Remove from the heat and let cool to warm.
  • Step 2
    • Whisk the egg yolks until they thicken and become pale.
  • Step 3
    • When the cream and milk mixture has cooled, add the egg yolks while whisking.
    • Add the remaining ingredients and whisk.
  • Step 4
    • Return the pan to the hob and bring to an almost boil, stirring gently.
    • Heat for about 15 mins until mixture thickens.
  • Step 5
    • Remove from the heat and leave to cool.
  • Step 6
    • Leave to cool, place in the fridge to chill for 2 hours then for the last 20 minutes transfer to the freezer.
  • Step 7
    • Make according to the ice cream machine instructions.
