
Machine-made delicious vanilla ice cream with honey as the sweetener. Not the cheapest recipe but everyone loved it including a visiting Great Auntie.

Honey Vanilla Ice Cream

Ingredients
- 250 ml cream
- 250 ml milk
- 85 g honey
- 2 egg yolks
- 1 tsp vanilla essence
- ¼ tsp salt

Method
- Step 1
- Add the cream and milk to a pan and heat until hot but not boiling.
- Remove from the heat and let cool to warm.
- Step 2
- Whisk the egg yolks until they thicken and become pale.
- Step 3
- When the cream and milk mixture has cooled, add the egg yolks while whisking.
- Add the remaining ingredients and whisk.
- Step 4
- Return the pan to the hob and bring to an almost boil, stirring gently.
- Heat for about 15 mins until mixture thickens.
- Step 5
- Remove from the heat and leave to cool.
- Step 6
- Leave to cool, place in the fridge to chill for 2 hours then for the last 20 minutes transfer to the freezer.
- Step 7
- Make according to the ice cream machine instructions.
