Ingredients

  • 1 x avocado
  • 50 g cherry tomatoes
  • 200 g smoked salmon
  • 100 g cream cheese
  • 4 x eggs
  • 2 tsp butter
  • pinch (large) salt

Instructions

Preparation

  • Peel, de-seed and slice the avocado.
  • Halve the tomatoes.

Method

  • Step 1
    • To make the scrambled eggs, melt the butter in a medium frying pan over medium heat. (Number 5.)
    • Crack the eggs in a bowl, add the salt, and whisk with a fork.
    • Add the eggs to the frying pan, and stir often.
    • When the eggs are mostly but not entirely solid, remove them from the heat and divide them equally between two plates.
  • Step 2
    • Divide all the remaining ingredients onto the two plates.
  • Step 3
    • Wrap a slice of avocado and some cream cheese inside each smoked salmon slice.
    • Serve.
