Ingredients
- 1 x avocado
- 50 g cherry tomatoes
- 200 g smoked salmon
- 100 g cream cheese
- 4 x eggs
- 2 tsp butter
- pinch (large) salt

Preparation
- Peel, de-seed and slice the avocado.
- Halve the tomatoes.
Method
- Step 1
- To make the scrambled eggs, melt the butter in a medium frying pan over medium heat. (Number 5.)
- Crack the eggs in a bowl, add the salt, and whisk with a fork.
- Add the eggs to the frying pan, and stir often.
- When the eggs are mostly but not entirely solid, remove them from the heat and divide them equally between two plates.
- Step 2
- Divide all the remaining ingredients onto the two plates.
- Step 3
- Wrap a slice of avocado and some cream cheese inside each smoked salmon slice.
- Serve.
