Keto Prawn Cocktail With Marie Rose Sauce

Ingredients
- 400 g prawns
- 4 x (large) iceberg lettuce leaves
- 1 x tomato
- 1 x avocado
- 20 ml extra light olive oil
- ½ egg
- 1 tsp Dijon mustard
- ½ tsp white vinegar
- ¼ tsp salt
- 1 tbsp tomato puree
- 1 tsp lemon juice
- Optional
- pinch cayenne powder
Instructions
Preparation
- Wash and peel the prawns.
- Shred the lettuce.
- Slice the tomato.
- Slice the avocado.
Method
- Step 1
- For the marie rose sauce, place the olive oil and egg into a bowl.
- Using a handheld blender, whisk until the two are mixed and creamy.
- Add the Dijon mustard, vinegar, salt, tomato puree and lemon juice and briefly blend again.
- Step 2
- Mix the prawns and the marie rose sauce.
- Step 3
- Divide the lettuce and place it at the bottom of four bowls.
- Spoon the prawn mix over the lettuce leaves.
- Arrange the avocado and tomato slices over the top of the prawns.
- Step 4
- Serve chilled with the cayenne pepper sprinkled on top, or omit it if you prefer.
