A vegetable alternative to mashed potato. It won't fool anyone but it's good enough as a lower calorie alternative.

Ingredients

  • 400 g cauliflower
  • 2 tbsp butter
  • ¼ tsp salt

Instructions

Preparation

  • Roughly chop the cauliflower.

Method

  • Step 1
    • Boil the cauliflower florets for about 25 mins until soft.
    • Drain off the water.
  • Step 2
    • Put the boiled cauliflower, the lard and the salt into a food processor.
    • Pulse until it resembles mashed potatoes.
  • Step 3
    • Serve.
