
A vegetable alternative to mashed potato. It won't fool anyone but it's good enough as a lower calorie alternative.

Mashed Cauliflower

Ingredients
- 400 g cauliflower
- 2 tbsp butter
- ¼ tsp salt

Preparation
- Roughly chop the cauliflower.
Method
- Step 1
- Boil the cauliflower florets for about 25 mins until soft.
- Drain off the water.
- Step 2
- Put the boiled cauliflower, the lard and the salt into a food processor.
- Pulse until it resembles mashed potatoes.
- Step 3
- Serve.
