Mashed Cauliflower With Bacon And Cheese

Ingredients
- 400 g cauliflower florets
- 2 tbsp butter
- ¼ tsp salt
- 50 g cheddar cheese
- 2 x slices bacon

Preparation
- Chop the cauliflower into florets.
- Grate the cheese.
Method
- Step 1
- Boil some water in a saucepan.
- When it's boiling, add the cauliflower, cook for 20 mins until soft, and drain.
- Step 2
- In a food processor, add the cooked cauliflower, butter and salt.
- Blitz until smooth.
- Step 3
- Turn the grill on high.
- Step 4
- Spoon the cauliflower into an oven-proof dish of approx. 15cm by 15cm.
- Sprinkle the cheese on top.
- Place under the grill for 5-10 mins until the cheese is bubbling and slightly browned.
- Step 5
- While grilling, place the bacon on a microwaveable plate and cook to desired doneness.
- Cut the cooked bacon into small pieces.
- Step 6
- Sprinkle the bacon bits onto the cheese and serve.
