Mushroom Soup

Ingredients

  • 75 g mushrooms
  • 110g (1 x medium) onion
  • 2 tbsp olive oil
  • 250 ml coconut cream
  • 240 ml beef stock

Preparation

  • Finely chop the fennel.

Method

  • Step 1
    • Heat the olive oil in a medium saucepan over medium heat. (Number 6.)
  • Step 2
    • Fry the fennel until it starts to brown; stir often.
  • Step 3
    • Add the mushrooms and fry until they are soft.
  • Step 4
    • Add the beef stock cube and the coconut cream and stir in.
  • Step 5
    • Turn the heat down to low until the sauce is barely simmering.
    • Leave to simmer for 20 mins.
  • Step 6
    • Divide the mushroom sauce into two halves.
    • Puree half of the sauce with a food processor or handheld blender.
    • Stir the two halves back together again.
  • Step 7
    • Serve.
