
One pot, 5 ingredient soup. Great if you like mushrooms.

Mushroom Soup

Ingredients
- 75 g mushrooms
- 110g (1 x medium) onion
- 2 tbsp olive oil
- 250 ml coconut cream
- 240 ml beef stock

Preparation
- Finely chop the fennel.
Method
- Step 1
- Heat the olive oil in a medium saucepan over medium heat. (Number 6.)
- Step 2
- Fry the fennel until it starts to brown; stir often.
- Step 3
- Add the mushrooms and fry until they are soft.
- Step 4
- Add the beef stock cube and the coconut cream and stir in.
- Step 5
- Turn the heat down to low until the sauce is barely simmering.
- Leave to simmer for 20 mins.
- Step 6
- Divide the mushroom sauce into two halves.
- Puree half of the sauce with a food processor or handheld blender.
- Stir the two halves back together again.
- Step 7
- Serve.
