A paleo version of bbq ribs but just as good. Takes a while but most of it is hands-off. Everyone loved it.

Pork Spare Ribs With Honey Bbq Sauce

Ingredients

  • 2 x 1.5kg pork spare ribs
  • 120 ml honey
  • 60 ml white vinegar
  • 2 x cloves garlic
  • 2 tsp tomato puree
  • 2 tsp sweet paprika
  • 1 tsp baking soda
  • ½ tsp salt
  • ⅛ tsp dried ground ginger
  • pinch black pepper

Preparation

  • Allow time to marinate. (See Step 1.)

Method

  • Step 1
    • Rub the salt onto all sides of the pork spare ribs and cut the ribs every 2-3 ribs.
    • Mix all the remaining ingredients in a large bowl and place the ribs in the bowl.
    • Mix everything up: ensure each rib is covered in the marinade.
    • Cover the bowl and leave it in the fridge for 1 hour.
  • Step 2
    • Preheat a fan-assisted oven to 190°C.
  • Step 3
    • Line the bottom of a baking tray with 2-3 layers of thick aluminium foil.
    • Place the ribs, meat-side down, flat on the baking tray.
    • Pour any leftover marinade over the ribs.
    • Use another sheet of aluminium foil to cover the ribs in the tray.
  • Step 4
    • Cook the ribs in the oven for 1 hour, turning the ribs every 15 mins.
    • Remove the covering layer of aluminium foil at 30 mins.
  • Step 5
    • Serve.
