
A paleo version of bbq ribs but just as good. Takes a while but most of it is hands-off. Everyone loved it.

Pork Spare Ribs With Honey Bbq Sauce

Ingredients
- 2 x 1.5kg pork spare ribs
- 120 ml honey
- 60 ml white vinegar
- 2 x cloves garlic
- 2 tsp tomato puree
- 2 tsp sweet paprika
- 1 tsp baking soda
- ½ tsp salt
- ⅛ tsp dried ground ginger
- pinch black pepper

Preparation
- Allow time to marinate. (See Step 1.)
Method
- Step 1
- Rub the salt onto all sides of the pork spare ribs and cut the ribs every 2-3 ribs.
- Mix all the remaining ingredients in a large bowl and place the ribs in the bowl.
- Mix everything up: ensure each rib is covered in the marinade.
- Cover the bowl and leave it in the fridge for 1 hour.
- Step 2
- Preheat a fan-assisted oven to 190°C.
- Step 3
- Line the bottom of a baking tray with 2-3 layers of thick aluminium foil.
- Place the ribs, meat-side down, flat on the baking tray.
- Pour any leftover marinade over the ribs.
- Use another sheet of aluminium foil to cover the ribs in the tray.
- Step 4
- Cook the ribs in the oven for 1 hour, turning the ribs every 15 mins.
- Remove the covering layer of aluminium foil at 30 mins.
- Step 5
- Serve.
