A minimalist herb rub of smoked paprika and thyme for pork spare ribs - not quite as tasty as the honey-bbq sauce version but a lot faster and with less calories.

Pork Spare Ribs With Smoked Paprika And Thyme Rub

Ingredients

  • 1 x rack spare ribs
  • 1 tsp smoked paprika
  • 2 tbsp ghee
  • ½ tsp salt
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • ¼ tsp dried thyme

Instructions

Preparation

  • Needs at least 1 hour to marinate. (See Step 1.)

Method

  • Step 1
    • Melt the ghee until liquid.
    • When melted, stir in the salt, garlic, pepper, thyme and paprika.
    • Use a pastry brush and brush the mixture over the ribs. Make sure to cover all sides.
    • Cover the ribs and leave them to marinate in the fridge for at least one hour.
  • Step 2
    • Preheat a fan-assisted oven to 200°C.
  • Step 3
    • Place the spare rib on a baking tray and cover it with aluminium foil.
    • Roast the ribs for one hour. Remove the aluminium foil halfway through cooking.
  • Step 4
    • To serve, cut the ribs in half.
