
A basic recipe for pork that's fast, healthy, cheap and very adaptable.

Pork Stir Fry

Ingredients
- 300 g pork medallions
- 200 g bell peppers
- 150 g carrot
- 100 g onion
- 2 tbsp ghee
- 1 tsp smoked paprika
- 1 tsp ground cumin
- ½ tsp salt
- ½ tsp black pepper

Preparation
- Remove the pork from the fridge 15 mins before cooking.
- Cut the pork into bite-sized pieces.
- Slice the onion.
- Slice the peppers.
- Spiralise or grate the carrot.
Method
- Step 1
- Melt the ghee in a large frying pan over medium-high heat. (Number 7.)
- Step 2
- When the ghee is hot, add the pork.
- Fry for 3 mins; flip the pork over and fry for another 3 mins.
- When cooked and the juices run clear, remove the pork and cover.
- Step 3
- In the same pan, add the bell pepper, onion and carrot to the pan.
- Stir often until the onion becomes translucent, about 7 mins.
- Add the pork back to the pan.
- Add the paprika, cumin, salt and pepper and stir for 1 min.
- Step 4
- Serve.
