A basic recipe for pork that's fast, healthy, cheap and very adaptable.

Pork Stir Fry

Ingredients

  • 300 g pork medallions
  • 200 g bell peppers
  • 150 g carrot
  • 100 g onion
  • 2 tbsp ghee
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

Preparation

  • Remove the pork from the fridge 15 mins before cooking.
  • Cut the pork into bite-sized pieces.
  • Slice the onion.
  • Slice the peppers.
  • Spiralise or grate the carrot.

Method

  • Step 1
    • Melt the ghee in a large frying pan over medium-high heat. (Number 7.)
  • Step 2
    • When the ghee is hot, add the pork.
    • Fry for 3 mins; flip the pork over and fry for another 3 mins.
    • When cooked and the juices run clear, remove the pork and cover.
  • Step 3
    • In the same pan, add the bell pepper, onion and carrot to the pan.
    • Stir often until the onion becomes translucent, about 7 mins.
    • Add the pork back to the pan.
    • Add the paprika, cumin, salt and pepper and stir for 1 min.
  • Step 4
    • Serve.
