
Chewy, gooey and delicious, warm and mildly sweet - I really loved it, Carl was ok, the kids were meh... obviously! Makes use of autumn and winter veggies.

Roasted Autumn Root Vegetables

Ingredients
- 180 g (1 medium) apple
- 130 g (1 medium) sweet potato
- 70 g (1 medium) parsnip
- 2 tbsp honey
- 1 tbsp oil
- ½ tsp salt
- ¼ tsp black pepper
- ⅛ tsp ground cinnamon

Preparation
- Peel, de-core and roughly chop the apple.
- Peel and dice the sweet potato.
- Peel, top and tail and dice the parsnip.
Method
- Step 1
- Preheat a fan-assisted oven to 200°C.
- Step 2
- Mix the oil, salt, black pepper, ground cinnamon, and all the vegetables.
- Step 3
- Line a baking tray with baking paper.
- Spread the vegetables out evenly on the tray.
- Drizzle the honey over the vegetables.
- Step 4
- Roast in the oven for 30 mins; turn the vegetables halfway through the cooking time.
- Step 5
- Serve half for a main meal or a quarter as a side dish.
