Roasted Broccoli And Butternut Squash

Ingredients

  • 450 g (½ medium) butternut squash
  • 60 g (1 medium) tomato
  • 100 g (½ medium) broccoli
  • 40 g (3 medium) spring onions
  • 1 tsp curry powder (any strength)
  • ½ tsp salt
  • 2 tbsp oil

Instructions

Preparation

  • Peel, de-seed and dice the butternut squash.
  • Chop the broccoli into small florets.
  • Dice the tomato.
  • Thickly slice the spring onions

Method

  • Step 1
    • Preheat a fan-assisted oven to 200°C.
  • Step 2
    • Mix all ingredients and place in a large casserole dish.
  • Step 3
    • Roast the vegetables for 40 mins, and stir part of the way through.
  • Step 4
    • Serve.
