Roasted Broccoli And Butternut Squash

Ingredients
- 450 g (½ medium) butternut squash
- 60 g (1 medium) tomato
- 100 g (½ medium) broccoli
- 40 g (3 medium) spring onions
- 1 tsp curry powder (any strength)
- ½ tsp salt
- 2 tbsp oil

Preparation
- Peel, de-seed and dice the butternut squash.
- Chop the broccoli into small florets.
- Dice the tomato.
- Thickly slice the spring onions
Method
- Step 1
- Preheat a fan-assisted oven to 200°C.
- Step 2
- Mix all ingredients and place in a large casserole dish.
- Step 3
- Roast the vegetables for 40 mins, and stir part of the way through.
- Step 4
- Serve.
