
Sizzled chicken thighs, soft, moist meat dripping with juices. it works way better with skin-on but I can never seem to find them at the butchers.

Sizzling Chicken Thighs

Ingredients
- 4 x chicken thighs (boneless and skinless)
- 2 tbsp lard
- 1 tsp salt
- ½ tsp black pepper

Preparation
- Remove the chicken from the fridge 30 mins before cooking.
Method
- Step 1
- Melt the lard in a frying pan on high heat. (Number 8.)
- Step 2
- Dry the chicken thighs with a kitchen towel and rub them with salt and pepper.
- Step 3
- Add the chicken thighs to the pan and cook for 10-15 mins turning partway through. The chicken is cooked when a meat thermometer reads 75°C.
- Step 4
- Serve.
