You brought a cheap bunch of beetroot at the farmer's market - well, here is what you can do with it!

Smashed Balsamic Beetroot

Ingredients

  • 500 g beetroot
  • 60 ml balsamic vinegar
  • 400 ml water
  • ¼ tsp salt
  • 2 tbsp ghee

Instructions

Preparation

  • Top, tail and peel the beetroot.
  • If any of the beetroots are very large, cut them in half.

Method

  • Step 1
    • Add the water and vinegar to a saucepan and give a quick stir.
    • Place the beetroot into the pan, the liquid should just cover the beetroots - if not, add a bit more water.
  • Step 2
    • Set it to simmer for about an hour until the beetroot softens.
  • Step 3
    • In a large frying pan, melt the ghee on a high heat. (Number 8.)
  • Step 4
    • Drain the beetroot.
    • Place the beetroot on a chopping board, and press down on each one with a plate to 'smash' them.
  • Step 5
    • Sprinkle the beetroot with salt.
  • Step 6
    • Fry the beetroot for 1 minute on each side.
  • Step 7
    • Serve by themselves or with a dip.
