
You brought a cheap bunch of beetroot at the farmer's market - well, here is what you can do with it!

Smashed Balsamic Beetroot

Ingredients
- 500 g beetroot
- 60 ml balsamic vinegar
- 400 ml water
- ¼ tsp salt
- 2 tbsp ghee

Preparation
- Top, tail and peel the beetroot.
- If any of the beetroots are very large, cut them in half.
Method
- Step 1
- Add the water and vinegar to a saucepan and give a quick stir.
- Place the beetroot into the pan, the liquid should just cover the beetroots - if not, add a bit more water.
- Step 2
- Set it to simmer for about an hour until the beetroot softens.
- Step 3
- In a large frying pan, melt the ghee on a high heat. (Number 8.)
- Step 4
- Drain the beetroot.
- Place the beetroot on a chopping board, and press down on each one with a plate to 'smash' them.
- Step 5
- Sprinkle the beetroot with salt.
- Step 6
- Fry the beetroot for 1 minute on each side.
- Step 7
- Serve by themselves or with a dip.
