Spiced Mahi Mahi

Ingredients

  • 2 x mahi mahi fillets
  • 1 tbsp lard
  • 1 tsp dried parsley
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • ¼ tsp cayenne pepper

Instructions

Preparation

  • Remove the mahi mahi from the fridge about 30 mins before cooking to warm up.

Method

  • Step 1
    • Dry the mahi mahi by patting it with kitchen paper.
    • Mix all the above spices in a bowl and rub on both sides of each mahi mahi.
  • Step 2
    • Heat the lard in a medium frying pan on medium-high heat. (Number 7.)
  • Step 3
    • Place the spiced mahi mahi skin side down and cook for 4 mins.
    • Flip over and cook for another 4 mins.
    • When the mahi mahi is cooked, remove it from the heat.
    • A meat thermometer will read 52°C.
  • Step 4
    • Serve.
