
Mahi mahi with garlic and cayenne, simple and tasty.

Spiced Mahi Mahi

Ingredients
- 2 x mahi mahi fillets
- 1 tbsp lard
- 1 tsp dried parsley
- ¼ tsp salt
- ¼ tsp black pepper
- ¼ tsp garlic powder
- ¼ tsp cayenne pepper

Preparation
- Remove the mahi mahi from the fridge about 30 mins before cooking to warm up.
Method
- Step 1
- Dry the mahi mahi by patting it with kitchen paper.
- Mix all the above spices in a bowl and rub on both sides of each mahi mahi.
- Step 2
- Heat the lard in a medium frying pan on medium-high heat. (Number 7.)
- Step 3
- Place the spiced mahi mahi skin side down and cook for 4 mins.
- Flip over and cook for another 4 mins.
- When the mahi mahi is cooked, remove it from the heat.
- A meat thermometer will read 52°C.
- Step 4
- Serve.
