Sweet Potato And Tuna Bake

Ingredients
- 130 g (1 medium) sweet potato
- 1 small can (110 g) undrained tin of tuna in oil
- ½ green bell pepper
- ½ medium onion
- 2 tsp smoked paprika
- ½ tsp thyme
- ¼ tsp garlic powder

Preparation
- Peel and dice the sweet potato.
- Roughly dice the green bell pepper.
- Roughly dice the onion.
Method
- Step 1
- Preheat a fan-assisted oven to 200°C.
- Step 2
- Mix all the ingredients in a 22cm x 22cm casserole dish, ensuring the oil from the tinned tuna covers all the vegetables.
- Step 3
- Bake for 25 mins, stirring well halfway through.
- Step 4
- Serve.
