Tinned Tuna And Goats' Cheese Salad

Ingredients
- For the salad
- 250 g drained tinned tuna
- 250 g (2 medium) avocado
- 200 g (1 medium) cucumber
- 200 g tomatoes
- 100 g lettuce
- 100 g goats' cheese
- For the dressing
- 60 ml extra virgin olive oil
- ½ tbsp lime juice
- 1 tsp Dijon mustard
- ⅛ tsp salt
- ⅛ tsp black pepper
Instructions
Preparation
- Drain the tuna.
- Dice the tomatoes.
- Top, tail and dice the lettuce.
- Peel, de-seed and dice the avocados.
- Tear up the lettuce.
- Crumble the goats' cheese into small pieces.
Method
- Step 1
- In a small bowl, mix all the dressing ingredients.
- Step 2
- In a large salad bowl, mix all the salad ingredients.
- Step 3
- Drizzle the dressing over the salad to serve.
