A low-carb salad of tinned tuna, sharp goats' cheese, avocado, and cooling veggies. Carl really liked this one for his work lunch.

Tinned Tuna And Goats' Cheese Salad

Ingredients

  • For the salad
    • 250 g drained tinned tuna
    • 250 g (2 medium) avocado
    • 200 g (1 medium) cucumber
    • 200 g tomatoes
    • 100 g lettuce
    • 100 g goats' cheese
  • For the dressing
    • 60 ml extra virgin olive oil
    • ½ tbsp lime juice
    • 1 tsp Dijon mustard
    • ⅛ tsp salt
    • ⅛ tsp black pepper

Instructions

Preparation

  • Drain the tuna.
  • Dice the tomatoes.
  • Top, tail and dice the lettuce.
  • Peel, de-seed and dice the avocados.
  • Tear up the lettuce.
  • Crumble the goats' cheese into small pieces.

Method

  • Step 1
    • In a small bowl, mix all the dressing ingredients.
  • Step 2
    • In a large salad bowl, mix all the salad ingredients.
  • Step 3
    • Drizzle the dressing over the salad to serve.
