Sticky, sweet delicious with a slightly heavy sponge. At some point I will make one that is lighter but in the meantime this is fab!

Treacle Sponge

Ingredients

  • 100 g self-raising flour
  • 100 g butter
  • 100 g sugar
  • 2 x eggs
  • 1 tsp baking powder
  • ½ tsp vanilla essence
  • 8 tbsp golden syrup
  • 1 tsp butter

Instructions

Method

  • Step 1
    • Preheat the oven to 180°C.
  • Step 2
    • In a 23cm x 23cm oven-proof dish, rub the bottom and all sides with the 1 tsp of butter.
    • Pour the golden syrup into the dish.
  • Step 3
    • Mix the flour, butter, sugar, baking powder and vanilla essence until smooth.
    • Pour the sponge mixture on top of the syrup.
  • Step 4
    • Bake in the oven for 20 mins.
  • Step 5
    • Serve warm with cream or custard.
