
Sticky, sweet delicious with a slightly heavy sponge. At some point I will make one that is lighter but in the meantime this is fab!

Treacle Sponge

Ingredients
- 100 g self-raising flour
- 100 g butter
- 100 g sugar
- 2 x eggs
- 1 tsp baking powder
- ½ tsp vanilla essence
- 8 tbsp golden syrup
- 1 tsp butter

Method
- Step 1
- Preheat the oven to 180°C.
- Step 2
- In a 23cm x 23cm oven-proof dish, rub the bottom and all sides with the 1 tsp of butter.
- Pour the golden syrup into the dish.
- Step 3
- Mix the flour, butter, sugar, baking powder and vanilla essence until smooth.
- Pour the sponge mixture on top of the syrup.
- Step 4
- Bake in the oven for 20 mins.
- Step 5
- Serve warm with cream or custard.
