
A colourful salad with sweet vegetables, mango and red currants. A little expensive so keep it for special occasions.

Tricolour Salad

Ingredients
- ½ medium iceberg lettuce
- 1 medium avocado
- 1 medium mango
- 1 medium red bell pepper
- 20 g red currants
- 2 tbsp extra virgin olive oil
- 2 tsp white vinegar
- ⅛ tsp salt
- ⅛ tsp black pepper
Instructions
Preparation
- Peel, de-seed and dice the avocado, mango and red bell pepper.
- Shred the lettuce.
Method
- Step 1
- Take a small piece of the mango and crush it to make approximately 2 tsp of mango juice, and add the liquid to a small bowl.
- Add the olive oil, white vinegar, salt, and pepper to the bowl.
- Mix everything thoroughly.
- Step 2
- Add all the ingredients to a large salad bowl and mix thoroughly.
- Step 3
- Serve.
